Friday the 13th – Overview- We achieved 2.5 turns and a PPA in the mid sixties. It felt like the team was firing on all cylinders. Awesome Friday!
Mood Scale- Lynnea was serving a whole bass to a party of 3 at 32 and discovered it was undercooked before they began eating. She immediately let a manager know and Chef Lisa got a new one to the table right away. The guests were very impressed with our recovery- after the savory course, Lanie’s recommended pairing for mezcal with the apple tart was the almost literal cherry on top of our turnaround. Leslie and Malcolm tag teamed flawless wine service at Phil Vettel’s table- they were so pleased and even asked to take home their leftover half chicken and tortillas.
One of our 10:45PM reservations (all 3 made it in – even with the rain!) was a mother and daughter. The mother named Thelma Rodriguez was visiting from San Antonio where she had been a culinary instructor at a high school. Years back chef Rick had sponsored her class’ underprivileged students on a culinary trip to Chicago: she wanted me to let him know what a big impact that made on her students, and eats at a Bayless restaurant every time she visits her daughter in Chicago. This late dinner was her Mother’s Day gift. Being a late table, it would have been all to easy to let fatigue degrade our hospitality. Instead we rallied as a team. Clayton threw a fresh log on the embers, to spark a fire as backdrop for mother / daughter photo, and engaged them in culinary conversation, and that’s when I knew we had raised these two to a total 10. Great job by FOH and BOH working together!
