Slower paced night proved to be a good match for the somewhat worn out staff: we had a couple of the staff who wanted to call out earlier in the day come in for the good of the team, and accommodated them by having them leave early. Mental slip-ups, especially in the beginning of the night, were a speed bump we had to overcome. The energy and liveliness of the night was at the right level, with a day’s rest the staff’s energy and mental focus will be back to the right level as well.
True Champion: Zach and Alonzo, were able to put together and execute a seating plan well beyond their HC training, and they were a shining success. Zach considered tonight his quinceanero, his first time as a Maitre D.
