My first meal in DF was traditional barbacoa at El Hidalguense. I understand the owner and barbacoa master, who was there, raises his animals with great care at his rural family home outside the city. The lamb was incredible: my favorite bites were the sopes and the main course of barbacoa.

I did not try the michiote of lamb testicles, and my excuse is that I was distracted by the World Cup game on the TV… I did eat grubs and ant eggs, the latter available only in the rainy season, were buttery and well seasoned. I would come back for the barbacoa for sure, and would order ant eggs again.

I was a big fan of their approach to selling desserts: they came to our group’s table with a huge assortment of sweets on a tray. Spikes in blood sugar ensued.
