Ranunculus Flowers — July 26 – 30, 2022

ULC Logbook, Wednesday, July 27th, 2022:

We started with 44 covers (21 inside, 23 outside). One same-day reservation for 2 guests did not show. We were not joined by any walk-in parties: tonight was an all-reservation affair. We finished with 54 guests, evenly split (27 inside, 27 outside).

For BA’s, we were joined by: Dr. B. K. / D. K. (party of 4, tbl. 17); Dr. and Mrs. G., with the G.’s son’s family (party of 6, tbl. 62+); Patrick D. (party of 6, tbl. 5); J. and Mrs. H. celebrating C.’s birthday (party of 4, tbl. 3); Chef Sal C. (party of 2, tbl. 6); M. M. (party of 3, tbl. 76); Haig K. (party of 2, tbl. 4); Craig O. (party of 4, tbl. 63); Darin C. (party of 2, tbl. 13).

The H.’s (party of 4, tbl. 3, served by P. G.) invited their good friends, R. and C., to join them for dinner tonight, in celebration of C.’s birthday. I know they are the H.’s good friends, because when R. and C. arrived ahead of the H.’s, holding gentleman’s hat, which I offered to check, R. replied, “This hat belongs to Mr. H. and I need to return it to him personally.” After dinner, Mr. and Mrs. H. said they greatly appreciated P.’s hospitality, Chef’s talent, “Each course was better than last,” and that they had a wonderful time tonight. The star of the entire dinner, however, without question, was Chef T., for her BEAUTIFUL ranunculus flowers (per Mr. H.’s request, as they are C.’s favorite) hand-drawn in chocolate for Corinne’s birthday dessert, which was a real show-stopper. Bravo to P. G., Chef G., Chef T., the H.’s, and the team!

Dr. B. K.’s wife D. K. (party of 4, tbl. 17, served by P. G.) commented: “That was the best risotto I have ever had in my life.”

When G. directed R. to follow the patio procedure for ordering drinks — for the benefit of new bartender P. M. and also to prevent drinks from being re-made — R. responded with noted sassiness.

Today I put together the first version of the new staff education binder which contains all adjusted procedures that were messaged to the FOH staff on, “7 Shifts,” since last summer. The, “ULC Adjusted Procedures,” binder is now available at the front desk for reference and training.

Just a reminder that for in-person gift card sales, we have a new policy of using the “Gift Cards sold by Phone,” book to record the date of sale, name of buyer, and if possible, name of recipient, along with copies of the receipts for payment and gift card authorization. Mea culpa: the reminder is mostly for the front desk host who wears beige linen-polyester-blend blazers in the summer (that’s me) because yesterday he forgot to follow the new policy.
