“The halibut was to die for” — March 29 – 31, 2022

ULC Logbook, Tuesday, March 29th, 2022:

We started with 48 covers. We were joined by BA Benedict C., a solo walk-in, and a walk-in party of 2 on the early side of service: on the later side we were joined by a party of 2 regulars who walked in, and a same-day reservation for a solo guest who received a recommendation from the front desk at the Drake Hotel. We finished with 61 guests.

There were no orders for takeout.

For BA’s, we were joined by Dr. S. M. (party of 4, tbl. 17); Benedict C. (solo at bar); three parties were associated with the Yale School of Medicine, Dr. J. P. (party of 6, tbl. 30); Dr. J. C. (party of 10, tbl. 33+); Dr. N. K. (party of 5, tbl. 5).

We received many positive comments after today’s lunch event for the Knights of Columbus (at which I overheard that some of the guests had joined us all the way from Rome!) Former Supreme Knight / forever BA BA BA, C. A. A. and his wife, who sent their thanks to the chef and team, commented that everything today had been, “just perfect,” and they very much look forward to joining us again soon.

We served 2 tasting menus: the party, served by R., had not reserved for the experience in advance.

We served 9 restaurant week menus: only one party of 2 had reserved for restaurant week.

Wednesday’s weather: partly sunny, high of 48F (warm up coming by Thursday!)

ULC Logbook, Wednesday, March 30th, 2022:

We had approx. 50 covers (including the Sherman Room’s 16 guests) when I left on Tuesday night: Wednesday, the number jumped throughout the afternoon, and we had reached 80 covers by 4PM. On the early side of service, we were joined by a walk-in party of 2, and T. from Hull’s Art Supplies dined solo at the bar. On the later side, we were joined by the Chief Justice of Germany’s security detail (party of 2), and a walk-in party of 3. We finished with 87 guests.

There was one takeout order for BA Mr. B., placed by web.

For BA’s, we were joined by: Dr. Peter S. (party of 2, tbl. 3); Karen T. C. (party of 2, tbl. 14); Z. F., Yale Professor of Statistics (party of 5, tbl. 16); Dr. P. B. (party of 3, tbl. 12); Emanuela P. (party of 2, tbl. 35); B. A. (party of 4, tbl. 17) joined by the Chief Justice of Germany.

There was a 16 person dinner party celebrating a retirement in the Sherman Room.

Richard W. and his wife (party of 2, tbl. 4, served by R.) celebrated their 48th wedding anniversary. After their dinner, Mrs. W. asked me to thank the entire team for, “a wonderful, memorable night.” Bravo R., Chef and team!

G. spoke with A. regarding her performance as a busser.

P. served the 16 guests in the Sherman Room.

We served 5 restaurant week menus: 2 guests had reserved for RW.

We served 8 Chef’s tasting menus, including the BA’s at table 17, who had not reserved for this (bravo D.!) There was one party of 2 who had reserved for this but ended up going with a la carte.

N. called out.

Thursday weather forecast: high of 60F, chance of rain.

ULC Logbook, Thursday, March 31st, 2022:

We started with 103 covers in the afternoon. Towards the beginning of service, we were joined by a solo walk-in at table 28, and BA Adil dined solo at the bar. On the later end of service, we were joined by a solo bar guest named Joe, who was familiar with the restaurants I worked at in Chicago; a solo walk-in dined at table 19, and a party of 2 walk-in’s at table 21. The total was lessened by the cancellation of two 4-tops, but was buoyed by same-day reservations. We finished with 114 guests — this number includes parties of 18 guests in the Clubroom and 16 guests in the Sherman Room, but not the party of 25 guests in the Ballroom who were served from the upstairs kitchen.

There were two orders for takeout: BA Mr. B., placed by web; D., placed by phone.

For BA’s, we were joined by: Dean of Yale School of Medicine, Dr. D. L. (party of 7, tbl. 3); Yale School of Medicine’s Dr. W. T. (party of 6, tbl. 5); Monica B. (party of 2, tbl. 14); Mr. and Mrs. C. with their family, celebrating getting married today (party of 7, tbl. 30); Alexander F. (party of 2, tbl. 10); Adil C. (solo at bar); Patrick W. (party of 2, tbl. 9); Marc M. (solo, tbl. 13).

For large parties, we had: Isoplexis (party of 12, Sherman Room); Yale Economics Dept. (party of 25, Ballroom); Yale School of Medicine’s Dr. W. (party of 18, Clubroom).

Dr. W. T. (party of 6, tbl. 17, served by R. I.) raved about how lovely their group’s dining experience had been this evening. Dr. T. specifically commented: “The halibut was to die for.”

Rosemary L. (party of 2, tbl. 19, served by R.) said they greatly enjoyed the Restaurant Week experience with us. I was happy to contribute some of the building’s history at the end of their dinner.

D. sold the Chef’s tasting menu to Peter W. (party of 4, tbl. 26). After their dinner, the W.’s commented how they loved every course, and that the flow of courses dovetailed beautifully with their conversation: they said it was the perfect pacing of deliciousness. Bravo Chef, D., and team!

S. served 16 guests in the Sherman Room.

T. and J. served 25 guests in the Ballroom.

One party of 2 reserved for themselves on OpenTable for the Chef’s tasting menu; D. sold the experience to a party of 4 at the table: tonight we served 6 Chef’s tasting menus.

One party of 2 reserved particularly for Restaurant Week: tonight we served 17 Restaurant Week menus.

N. called out.

Friday’s forecast: high of 55F, April showers likely.
